Property Description
From atop the green hills surrounding one of the most pristine spots in Umbria, the Cooking School of Umbria looks out over the picturesque valley, dominated by Monte Peglia, with an enchantingly beautiful panorama, where old houses dot the wondrous forests of this natural park. On the grounds of the school old farmhouses have been painstakingly restored to give you the thrill of stepping into the past. All the rooms at the School have their own services, an independent entrance and are furnished with the traditional simplicity of Umbrian homes. The interiors have been redecorated with a careful eye to maintaining intact the original architectural features of buildings in this area: antique terracotta floors, large wooden beams, stone walls. The Cooking School of Umbria is located 12kms from Todi and overlooks countryside reputed to be among the most beautiful in central Italy. The school is within easy reach of not only Todi but of other well-known towns such as Orvieto and Perugia. The course will range from typical Umbrian cuisine, Neopolitan to Vegitarian dishes. The courses can also include, on request, day tours where guest can take part in wine tasting and visit olive oil refineries The course will involve guest’s participation in the preparation of dinner and the consumption of a fine selection of wines. Cooking courses run for between 8 and 14 people and last from between 3 and 7 days. The program 8.30am breakfast. 9am two-hour lesson covering traditional Italian dishes and special ingredients. 11am coffee break. 11.30am free time or organized trips to local wine and food producers. 4.30pm lesson in the kitchen and preparation of a number of dishes. 8.30pm dinner followed by a discussion on the dishes prepared and the wines. Note: prices do not include wines, bar expenses and other extras. Guests who participate in the cooking classes will acquire a familiarity with ingredients, which will certainly bring a touch of creativity into their every day meals. As Gabriella says, "a touch of fantasy is always an excellent spice in life and will ensure that your recipes are a success". Traditional Umbrian dishes you may learn to cook with Gabriella Mixed starters of pate, cured meat, cheese, testo pizza, fried panzerottini, pizza cooked over a wood fire. First courses: vegetable, spelt, bean or lentil soup; pappardelle with boar, pork, hare or meat ragout; ravioli stuffed with cheese with boletus cream sauce; mushroom, pumpkin or radicchio risotto with smoked provola cheese; traditional meat ragout or vegetable (artichokes and asparagus) lasagne. Main courses: boar medallions with polenta; guinea fowl in salmì; truffled lamb; fried or cacciatora rabbit; mixed roast with sausages and broccoli. Side dishes: grilled vegetables (courgettes, aubergines, potatoes and onions); peas and broad beans: artichokes alla romana; stuffed courgettes or aubergines with tomato and mozzarella. Desserts: tozzetti and macaroons; cream and fruit mimosa cake; nut cake; ice cream with citrus fruit sauce STOCK OF VINTAGE WINES The Angolo DiVino Wine Bar at the school stocks a broad range of Italian wines and offers a warm and welcoming atmosphere. Guests can book one of the wine tasting sessions featuring Umbrian wines organized by Giuseppe. EXTRA VIRGIN OLIVE OIL The School Produces organic Extra-Virgin Olive Oil, made from olives grown on its own land. This product is obtained using the traditional hand-harvesting and cold-pressing methods, which preserve all the delicate flavor and fragrance characteristic of Umbrian oils.
